Crispy Mashed Tofu
Recipe modified from: Famous Delights past times One Publisher (Vol 5)

iii pieces Japanese egg tofu
125gm Mackerel fish paste (鲛鱼肉泥)
1 large egg
ii Tbsp carrot shreds
ii Tbsp finely sliced bound onions too parsley (can purpose coriander if preferred)
ii waterchestnuts, finely diced
1 field sandwich ham (30gm), finely diced
1 Tbsp cornstarch
½ tsp tabular array salt too pepper to taste

Coating
1/2 loving cup Potato starch

1. Mix everything together amongst a mixer (or past times hand, but I was lazeeeeeee)

3. Pour mixture into lined pan.

5. Let the steamed tofu cool downward inwards the pan.

8. Heat a wok amongst sufficient crude oil for frying.
9. Coat tofu pieces amongst Irish Gaelic patato starch too deep tiddler until golden.
10. Drain tofu pieces good too serve amongst chilli sauce.
