Kerabu Pucuk Paku, Penang Nonya style

250gm trimmed fiddlehead ferns
1/4 loving cup cleaned shrimp, steamed

4-5 petals of torch ginger, finely sliced
1 Tbsp toasted peanuts, crushed

Dressing
two ruby chilli
1cm cube shrimp paste/ belacan
two Tbsp calamansi juice (30ml)
two tsp low-cal brownish saccharide or to taste
1/2 tsp common salt (or to taste)
iii Tbsp kokosnoot milk (45ml)

1. Prepare dressing. Pound ruby chilli amongst belacan until it turns to a coarse paste. Mix amongst the remainder of the ingredients in addition to sense of savor it. Adjust if needed. Make it slightly oversalted.
2. Blanch fiddlehead ferns inward boiling H2O for 1 minute. Drain in addition to house it on serving dish.
