Eggplant or brinjal is ane vegetable that many people either dearest it or abhor it, it's the extreme of either ends. I dearest eggplants... but less fossil oil please.
In Chinese cooking, eggplants are ordinarily deep fried earlier cooking amongst other ingredients. They produce this to "strengthen" the structure, therefore that it won't last all mushy. But it's a flake besides oily, cos, eggplants are proficient fossil oil 'suckers' !!!

Ingredients
1 long eggplant
3 shallots
2 cloves garlic
1 ruby-red chili
1 Tbsp dried shrimp (washed, dried, chopped finely, but I used really modest dried shrimps, therefore there’s no postulate to chop them up, the drier the shrimp, the crispier they'll be)
½ tsp salt
2 Tbsp oil
Method
1. Chop shallot, together with garlic finely. Separately chop chili finely besides
1 long eggplant
3 shallots

Method

2. Boil a modest saucepan of water. Cut eggplants merely to gibe the width of the pot.
Blanch eggplants until they are cooked together with soft, but non soggy. This takes less than ii minutes
4. Arrange nicely on a plate.
5. Heat wok together with seat inward oil. Saute garlic together with shallots until slightly golden.
6.Put inward chopped chili together with dried shrimp, together with sauté until everything is golden together with really fragrant
7. Put inward salt, together with stir.
