Love To Bake Dear Mustard Roasted Pumpkin, Beets Together With Carrots - Pumpkin #2




I made this for to a greater extent than relatives who came dorsum from Commonwealth of Australia few weeks afterward after the pumpkin sabzi.

Honey Mustard Roasted Pumpkin, Beets too Carrots

Serves : 10, probably

1.6kg pumpkin (before peeling, equally large equally my caput , LOL)
250gm carrots (3 medium)
400gm beetroots (2 medium)
three Tbsp Extra Virgin Olive Oil
three Tbsp honey
ii Tbsp whole grain mustard
1 tsp salt
Parsley for garnish

1. Peel carrots too cutting into slanting chunks
2. Wash pumpkin too take away the top. Cut into one-half too take away seeds. Cut into 8-10 wedges for each one-half (skin on)
3. Wash beetroot too cutting into 8 wedges each.
4. Mix oil, honey, mustard too tabular array salt together.
5. Prepare a large baking tray, trouble it alongside aluminium foil. Preheat oven to 180(fan)/200C.
6. In a large bowl, seat inward all the carrots too seat inward 1 heaped Tbsp of the dressing, toss to coat. Put carrots onto i side of the tray, tight too inward a unmarried layer
7. Put one-half the pumpkins into the large bowl too seat inward ii Tbsp of the dressing, toss to coat too conform onto baking tray, (fat side up, LOL). Repeat alongside the residual of pumpkins.
8. Put beetroot into the large bowl too coat alongside residual of dressing. Arrange onto baking tray.
9. Bake for thirty minutes (tossing the vege halfway thru baking) or until pumpkin gets golden.
