This tart is the pride of Sandakan. Read here. I start saw these on TV on Axian together with that's where I got to know well-nigh them. The featured store piped them like moo-cow dung together with I practise detect them looking cute. I imagined them beingness rather sweet.... cake, meringue, custard....

But when I tried making them based on a guideline from this site.. it turned out quite pleasant. It is withal on the sweetness side, but non that sweetness  (less sweetness than a bar of Snickers for sure!) Adding common salt to the meringue helps cutting the sweetness, but maintains the structure.

I prefer the base of operations to endure on the crispy side later on grilling as it genuinely gives some other textural dimension to the soft meringue. Maybe you lot volition intend otherwise as sense of savour is ever a personal thing. Tart Base
60gm butter (I used salted)
50gm sugar
1 egg (Grade B)
½ tsp vanilla extract
50gm cake flour, sifted amongst 1/2 tsp baking powder

Custard
1 egg yolk
1 Tbsp sugar
½ tsp vanilla extract
1 tsp custard powder
1 tsp patently flour
50gm milk

Meringue
1 egg white
1/8 tsp salt
Few drops of vinegar or ¼ tsp cream of tartar
ii Tbsp sugar
Few drops of vanilla

1. Preheat oven at 150(fan)/170C. Prepare 10 pcs of large egg tart tins (or purpose muffin pan)
2. Prepare tart base. Beat butter amongst saccharide until pale together with and then shell inward the egg. Beat until it looks similar buttercream. Beat inward vanilla extract. Fold inward flour. Divide into prepared pans. Bake for fifteen minutes.
3. Meanwhile, fix custard. Place egg yolk together with saccharide into a microwavable vessel together with whisk it until combined. Add inward custard pulverization together with flour together with whisk until smooth. Mix inward milk. Zap inward microwave on high on xxx seconds intervals together with stir. (Mine was done amongst ii zapping). Let it cool down. (you tin double boil, because this pocket-sized total makes straight oestrus cooking almost impossible)
4. Prepare meringue. Beat egg white amongst common salt until frothy, together with then position inward vinegar. Add inward saccharide gradually together with shell until stiff. Put inward vanilla together with reach it a low-cal beating simply to combine.
5. When the base of operations are done, take them from the pan together with separate the custard filling equally.
6. Pipe the meringue using a 7mm circular tip roughly together with on travel past times of custard inward your preferred manner.
7. Grill at 180C for ii minutes or until browned. Serve warm.
