1kg Beef ribs
400gm daikon, peeled together with kept whole
1 onion
twenty dark peppercorns
four cloves garlic
3L water
ii Tbsp lite soy sauce
1 Tbsp sesame oil
ii egg yolks
Sliced bound onion
1. Blanch beef ribs inwards boiling H2O for 3-5 minutes, until yous run into scum on the surface of the water. Rinse it nether running H2O until H2O runs clear.
2. Bring 3L H2O to boil inwards a build clean pot. Put the cleaned ribs,whole daikon, cracked dark peppercorns together with garlic. Bring dorsum to a boil.
3. Reduce to a simmer together with afterward 1 hour, take away the daikon. Let it cool together with piece it. Marinate the sliced daikon amongst lite soy sauce together with sesame oil.
4. Meanwhile nestling the egg yolks into a sparse omelette. Slice the omelette.
5. When the ribs are tender to your preference (mine took 2.5 hours inwards total), flavour amongst common salt together with soy sauce.
6. Serve amongst a generous topping of bound onions together with roughly omelette strips.
