My get-go fruit cakes, made iv mini loaves, iii to give away, i to keep. I didn’t desire to work Rum, every bit it’s too thus so expensive. Liquors are never inexpensive here. Due to Liquor taxation too amongst our pocket-size little currency. And I decided to become amongst fresh zest rather than candied peels.
From what I read from the net, fruit cakes involve to historic menses to instruct the best flavor out of the fruits, but this fruit cake uses no liquor, too thus I dare non allow it sit down too sit down for months. I but allow it sit down inwards the fridge, wrapped upwards for five days. And today I cutting it upwards too ate it slowly, slice past times piece. I similar it, actually similar it. Maybe the zest makes it different, cos I don't actually similar candied peels. Try this if u love orangish every bit much(or more) every bit I exercise :)
150gm glace cherries (mixed ruby-red too green, every bit u wish, coarsely chopped)
100 gm raisins + 100gm currants + 100gm sultanas (or whatsoever combination u prefer)
200ml orangish juice
two heaped Tbsp orangish zest
250gm butter
150gm sugar
225 gm all role flour
iv large eggs
I did it shortcut way.. macerated the fruits inwards but 1 lx minutes rather than overnight.
U may macerate the fruits overnight.
1. Macerate all the fruits too zest amongst orangish juice, overnight preferably.
2. Cream butter too saccharide until low-cal too fluffy.
3. Beat inwards eggs, i past times one, beating good later each addition.
4. Mix inwards flour until good combined.
5. Fold inwards macerated fruits too whatsoever juice that is remaining.
6. Place batter into iv mini loaf pans (3X6)
7. Bake inwards a preheated oven at 140C(fan)/160C for 1 hour. (bigger pans volition accept much longer)
