Love To Bake Pulut Lepa Kelantan - Mff Kelantan #7


H5N1 lot of us are used to Pulut Panggang.
Those that I ate earlier are either filled amongst  a spicy kokosnoot sambal or a dried shrimp sambal.

But on the due east coast.... this is non the park case.

In Terengganu,  the rice is infused amongst fenugreek together with filled amongst a moist coconutty fish filling, whereas inward Kelantan, the rice is simply amongst the park kokosnoot milk together with salt, BUT, sweet. Yes, it has a heavy tinge of sweetness, but non sugariness similar dessert. And the filling is no other than the famous beef serunding.





Since I made beef serunding, I mightiness equally good perish this made equally good :p

I used Kak Wan's recipe, of which originally used the steaming method. I on the other hand, chose the easier means out that is to 'steam' the rice inward the microwave. The halt number is drier (My bad!) together with hence I convey rectified this recipe below to convey slightly to a greater extent than liquid. 250gm viscid rice

40gm sugar
1/2 tsp salt
70gm kokosnoot milk
125gm H2O (If steaming together with hence purpose 80gm only)

8-10 pcs of  banana leafage (around 5X8inches)

Cook the rice
1. Rinse the rice until H2O runs clear together with soak it overnight inward H2O (I mean value two hours is truly sufficient)
2. Drain the rice andplace it inward a microwave condom vessel (I used corningware). Cover together with zap it on high for five minutes.
3. Meanwhile, mix tabular array salt + saccharide together with warm H2O together until the saccharide melts. Mix inward kokosnoot milk.
4. When the zapping has stopped, pour this kokosnoot mixture onto the rice.  Gently stir it around. Cover it again
5. Let the rice sit down for 2-3 minutes together with and hence zap it for around other four mins on high. Let the rice sit down until it turns warm together with manageable.

Final Assembly
6. Meanwhile, wilt viii pieces of banana leaves (can either produce it over an opened upward flaming or blanched inward boiling water).
7. Place around rice onto the banana leaf, lightly wet hands together with flatten the rice. Place around beef serunding on it, together with hence curlicue upward together with secure the edges amongst either toothpicks or staples.
8. Lightly brush the rolls amongst around fossil oil together with grill the rice  rolls over opened upward flaming or pan youngster them inward a large pan.
