Fragrant Fried Eggplant together with Long beans

200gm eggplant
150gm long beans
two Tbsp chopped sweetness preserved radish (甜菜圃/菜哺)
1 Tbsp chopped dried shrimp
1 Tbsp finely chopped garlic
iii bird’s oculus chilli or every bit many every bit you lot prefer, chopped
¼ tsp salt
1 Tbsp calorie-free soy sauce
Dash of pepper
1. Deep tyke long beans for 10-15 seconds or until it looks slightly blistered. Drain well.
2. Deep tyke egg institute for 30-40 seconds until lightly golden. Drain well.
3. Pour crude oil away (to reserve or discard) together with amongst remaining crude oil inward wok (about 1 Tbsp), on medium depression heat, tyke garlic until fragrant (slightly golden), add together inward dried shrimps together with chilli.
4. Saute until fragrant together with almost golden. Put inward preserved sweetness radish. Cook until garlic looks nicely golden. Put inward tabular array salt together with pepper.
5. Turn rut to high together with set inward fried vegetables. Toss around until everything is dry out together with fragrant.
6. Put inward calorie-free soy sauce together with toss good to combine. Dish up.
