These are called Almond puff pastry if y'all always encounter them inwards Baker’s Cottage (a Msian bakery chain). I prefer calling them almond puff fingers, equally they are finger sized.

This is a copycat version of those flora inwards Baker’s Cottage. Not equally buttery equally theirs, equally mine uses frozen shop bought puff pastry. More convenient!!! Sacrificing on flavour.... 'sigh'

I tried this two times, doing it amend the 2d fourth dimension around. First time, the peak was a chip chewy because I used pure egg white as well as Hub said it’s non sweetness enough. 2d time, I mixed the egg white alongside carbohydrate as well as it tasted like alongside the ones bought from BC.. two thumbs upwards from Hub.

1 pack puff pastry
two Tbsp egg white
two Tbsp fine carbohydrate (not icing sugar)
80gm almond flakes
two Tbsp fine sugar

Method:
1. Roll out pastry inwards betwixt two sheets of plastic to thickness of 5mm.
2. Mix egg white alongside two Tbsp sugar.
3. Peel upper canvass of plastic as well as spread egg white mixture evenly on peak of pastry.
4. Sprinkle almond flakes all over pastry.
5. Replace peak canvass of plastic as well as lightly coil to press almonds onto pastry.
6. Remove upper plastic canvass as well as sprinkle remaining carbohydrate over almonds.
7. Put pastry into the freezer for one-half an lx minutes to laid upwards the topping.
8. Preheat oven to 180C(fan)/200C.
9. Cut pastry into finger sized pieces. ( I cutting upwards xl pcs of them ) Place them onto a baking sheet. No withdraw to grease baking sheet.
10. Bake for 12 mins on 180C as well as thirty mins on 140C.

Period of baking varies depending on ovens. The get-go bake of 180C should terminate when the almonds attain a real low-cal golden colouring cloth as well as the pastry is good risen. 2d bake of 140C is to come inwards crunchy. You may withdraw to bake it longer if it’s notwithstanding non crunchy enough. But raising it to 150C may arrive at a slightly browner colour.
