Braised Mushrooms amongst Waterchestnuts
Serves 6

60gm dried chinese dark mushrooms (I used Camillia Mushrooms 茶树菇)
iii large cloves of garlic, peeled
vi pcs of waterchestnut, peeled
1 ½ Tbsp mushroom sauce or vegetarian oyster sauce
1 Tbsp lite soy sauce or more
½ Tbsp shao xing wine
Some white pepper powder
1 Tbsp oil
1 tsp cornstarch + two Tbsp water

Garnish
Blanched broccoli florets
Cooked carrot ‘flowers’

1. Soak mushrooms for at to the lowest degree 1 hour, until it has turned soft. Wash together with rinse mushrooms clean. Trim the stems away together with crush away excess moisture.
