Love To Bake Burnt Bottom Rice Vermicelli Amongst Pork Gravy 焦底米粉 - Mff Sabah #8



I got to know virtually this noodle from my friend, Soo who came from Tawau.

And I chop-chop searched for an icon to aid me sympathise the noodle. See the film here. 

Then Soo, described to me how the gustation as well as texture should be.




Rice noodles -can come upward alongside omelette or without. Both sides fried if without omelette. Plain, unseasoned.
Taste: No sweetness detected, non peppery, to a greater extent than on the savoury side.
Gravy texture: Slightly to a greater extent than diluted than Wat Dan Hor
Other affair to note: no vege, no jump onions, no specific chilli sauce, no ginger.

So, for those of you lot who had this noodle before..... I promise you lot tin elbow grease out my recipe as well as allow me know if its smiliar or not, hahaha.
But hence again... dissimilar woks dissimilar chefs.... difficult to larn the exact gustation right?
We only elbow grease our best.


Burnt Bottom Meehoon alongside Pork

Single serving

50gm rice vermicelli
ii eggs
1 shallot, sliced
1 garlic clove, minced
80gm pork slices (can role pork liver too)

Marinate pork with:
1 tsp soy sauce
pinch of sugar
few drops of sesame oil
1/2 tsp corn starch

Gravy
ii tsp corn starch
1 loving cup water
1 tsp oyster sauce
salt, soy sauce as well as pepper to taste

1. Soak rice vermicelli inwards tap H2O until softened. Drain as well as drip dry
2. Mix gravy ingredients together.
3. Heat a wok on medium oestrus as well as shell the eggs. Put inwards ii Tbsp of oil. Pour inwards the egg as well as allow the egg spread on its own. Put drained rice vermicelli onto the egg as well as nestling the egg until the base of operations is golden.
4. Flip the omelette as well as nestling the other side alongside rice vermicelli until it takes on only about colour. Dish upward onto a deep serving dish, omelette side up.
5. Put inwards 1 Tbsp of fossil oil as well as saute shallots first, hence garlic. Add inwards pork slices as well as stir nestling until the meat is nicely seared hence pour inwards the prepared gravy. Bring it to a boil. Add to a greater extent than starch+ H2O to arrange to the consistency you lot prefer as well as arrange the gustation too, larn inwards rattling slightly oversalted (because the rice noodles are non seasoned).
6. Pour the pork gravy onto the omelette.
